WHAT'S YOUR PAGE ABOUT?
This is where I'm bringing the hard conversations to light as I navigate the complexities of celiac disease, SIBO, Hypermobile Ehlers-Danlos Syndrome (hEDS), gastroparesis, dysautonomia, and infection-associated chronic illness (Long-COVID and Bartonella). It is my hope that this page will provide a sense of community among individuals navigating chronic illness, as well as tools that may assist you in cultivating joy and fulfillment in your own life.
Additionally, the need to follow various prescribed therapeutic diets (low-FODMAP, AIP, elemental, elimination, and low-histamine) as part of treatment required me to become creative in the kitchen. In the process, I developed a love for preparing nutritious homemade dishes, pastries, snacks, and desserts. As my symptoms progressed, I also saw the need for food preparation to be simple and not overly time-consuming to avoid sending myself into a flare. I plan to share these recipes and tips with you in the coming months.

A LITTLE BIT ABOUT ME
I majored in nutritional science during my first few years of undergrad, but due to worsening neurological symptoms, I made the difficult decision of returning home and finishing my degree remotely with Boston University so that I could focus on healing. During this time, I also received my health coaching certification from the Institute for Integrative Nutrition. I am now attending Teachers College, Columbia University where I am working towards my M.S. in Nutrition and Public Health to become a registered dietitian nutritionist (RDN). In the future, I anticipate attending PA (Physician Assistant) school so that I can expand how I am able to assist patients dealing with complex chronic illnesses.
Aside from my passion for spreading awareness around complex chronic illness, I enjoy spending time in nature and with God (my faith is fundamental to me), reading fantasy novels, writing, quality time with friends and family, baking, playing the piano, going to cozy cafes, and pilates!
Receiving a celiac diagnosis can be daunting. I remember when I was first diagnosed with celiac, and there was so much confusion surrounding what was safe and what wasn't. That's why I made The Celiac Disease Quickstart: To quickly ease you into life with celiac. In this mini-course, I discuss the science surrounding celiac, what gluten is and how it impacts celiacs, cross-contamination, reading labels at the grocery store, and everything in between!
